Wonderful for making, tamales, tortillas, sopes, tortilla chips. The Texture is Medium to Fine. Sifting the Blue Corn Masa Flour to remove clumps maybe be beneficial before adding to recipes.
Blue corn is known to have more protien than its white corn counterparts. It is also known to have a lower glycemix index.
